Each time I’ve been to Hawaii I bring back their famous chocolate covered macadamia clusters. Macadamia nuts coated in silky, hand-crafted chocolate. Pretty much an edible postcard from paradise. Well, this gourmet popcorn was inspired by it, but the addition of coconut gives it even more Hawaiian island flavor. No plane ticket necessary! Lightly salted popcorn meets coconut, chocolate and macadamia nuts for a satisfying snack experience.

Chocolate Macadamia Popcorn

Last week we were having an at-home movie night. Per usual I planned to make some gourmet popcorn. As I was grocery shopping for my usual mix-ins I saw macadamia nuts and realized I hadn’t had them in ages. They instantly reminded me of vacations in Hawaii, and those oh so dreamy chocolate covered macadamia clusters. At last, I thought of Coconut Macadamia Popcorn. This gourmet popcorn is easy to make, and may just become your new favorite for movie night, or any night ; )

The Ingredients

Popcorn

First we need popcorn, of course. For this recipe you can make fresh popcorn via a popcorn maker or microwave popcorn. This is the popcorn maker I use. If you want to make it even easier pick-up a ready-to-go bag that’s lightly salted.

Coconut

After you add popcorn to a bowl you’re going to drizzle coconut oil on top. If your coconut oil is solidified melt over the stove or microwave first. I use an extra virgin coconut oil for the best flavor and health benefits, too! Next, add finely shredded coconut. Most importantly, by adding the coconut oil then the shredded coconut it slightly coats the popcorn and really brings the coconut flavor to life!

Macadamia nuts

You can use unsalted macadamia nuts for this recipe, but if you want an extra salty sweet flavor experience opt for salted macadamia nuts!

Chocolate chips

Sprinkle in a couple tablespoons of chocolates chips. I use dark chocolate, however, if you prefer milk or cacao those would be delicious too. If the popcorn wasn’t pre-salted sprinkle sea salt to taste. I use Himalayan salt. Lastly, mix ingredients together with mixing spoons and enjoy!

Coconut Macadamia Popcorn

Lightly salted popcorn meets coconut, chocolate, and macadamia nuts for a satisfying snack experience. This gourmet popcorn is delicious and easy to make.

Equipment

  • Popcorn Maker (optional)

Ingredients
  

  • 7 cups Popped popcorn 1/2 cup popcorn kernels if using popcorn maker
  • 2 tbsp Coconut oil
  • 1 tbsp Finely shredded coconut
  • 1/4 cup Macadamia nuts
  • 3 tbsp Chocolate chips
  • pinch Himalayan sea salt

Instructions
 

  • Add popcorn to a large bowl.
  • Drizzle coconut oil over popcorn. If coconut oil is solitified, first melt over the stove or microwave for a few seconds.
  • Add shredded coconut and lightly mix to coat popcorn.
  • Add macadmaia nuts and chocolate chips.
  • Sprinkle with sea salt to taste if popcorn was not pre-salted.
  • Use mixing spoons to lightly combine ingredients together and enjoy!

Notes

  • Fresh popcorn, microwave popcorn, or a ready-to-go bag of lightly pre-salted popcorn will work well in this recipe. 
  • I use dark chocolate chips, but milk chocolate or cacao chips may be substituted.
  • Unsalted macadamia nuts work well in this recipe, but for an extra salty sweet experience opt for salted macadamia nuts.
  • You may use more or less of any mix-ins to your liking!
