Easy No Bake Treat

This recipe is EASY and delicious. You can make Coconut Peanut Butter Bites in less than 15 minutes and your kids can join in, too! No baking required! It’s the perfect snack to have ready-to-go in the fridge (especially if you have a little one asking for their 100th snack of the day😂) I personally love enjoying them with coffee for breakfast.

I simply mix the ingredients then Olive helps me roll the peanut butter “dough” into balls. After 20 minutes chilling in the fridge (no pun intended) we dig in! It’s become a fun activity we do together every week.

Britt’s Tips

  • The peanut butter mixture should be firm enough to make a ball that holds together. If dough is too mushy, add another tablespoon of oats until you reach desired consistency.
  • If the dough feels too firm, add another tablespoon of peanut butter and oat milk. Mix well then return to the refrigerator for another 15 minutes before rolling into balls!
  • Before mixing, you may choose to add the oats & dried coconut to a food processor or blender until they reach flour consistency, or leave them whole for a crunchier version!⁣
  • Don’t feel like peanut butter? Feel free to use any nut butter you like! I tried these with sunflower butter and they were a hit.

Storing Coconut Peanut Butter Bites

Store bites in a covered container in the fridge. This is a small batch recipe making it the perfect amount for a few days (or how quickly you eat them!) However, this recipe can simply be doubled and stored in the freezer. To freeze place the bites in an airtight container in the freezer. I store them in these freezer-safe silicone containers. The bites can be stored up to three months!

These no bake Coconut Peanut Butter Bites are yummy, wholesome, and only take a handful of ingredients.Perfect for breakfast, snack, or dessert. This recipe yields 6-8 bites.

Ingredients
  

  • 1/2 cup creamy unsalted peanut butter⁣
  • 1 cup old fashion or quick oats⁣
  • 1/4 cup shredded coconut – unsweetened ⁣
  • 2 tbsp honey (may also use agave)⁣
  • 1-2 tbsp coconut oil⁣
  • 1-2 tbsp oat milk ⁣
  • 1.5 tsp cinnamon ⁣
  • 1 tsp pure vanilla extract⁣
  • 1/8 tsp sea salt⁣

Instructions
 

  • Mix all ingredients in a bowl until well-combined.⁣
  • Cover and chill in the refrigerator for at least 20 minutes.⁣
  • Remove from fridge and roll into 1 inch balls between your hands⁣.
  • Enjoy!

Notes
