These 3-layer Chocolate Covered Raspberries are coated in dairy-free yogurt then dipped in melted chocolate for a healthy bite-size treat! The combination of tart raspberries, creamy yogurt, and decadent dark chocolate will have you coming back for seconds.

I love chocolate covered anything and wanted to create something cute for Valentine’s Day. Cue Chocolate Covered Raspberries, but with a twist! They are coated in frozen yogurt and chocolate to create 3-layers of color and sweetness! These were inspired by Valentine’s Day, and what’s cuter than feeding your Valentine a chocolate-covered red and pink bite-size treat?

Ingredients You Will Need:

  • Fresh raspberries
  • Dairy-free yogurt
  • Sweetener of choice (maple syrup, agave, or honey)
  • Vanilla extract
  • Red Food Coloring
  • Dark chocolate chips
  • Coconut oil

Britt’s Tips

  1. I use unsweetened cashew yogurt then add vanilla extract and sweetener to my liking. You can also simply use a store-bought sweetened vanilla or opt for flavored yogurt like raspberry or strawberry and exclude food coloring, vanilla and sweetener !
  2. I use dark chocolate or cacao chips, but use milk chocolate if preferred.
  3. For this recipe I use a plant-based red food coloring to make the yogurt pink. I found a 4 color pack at Whole Foods! You can also order plant-based food coloring online. If you’re using raspberry yogurt, or want to leave the yogurt white you can skip this step.

Chocolate Covered Yogurt Raspberries are Easy to Make

First wash fresh raspberries and dry well. Next add 1/4 cup plain unsweetened cashew yogurt to a bowl then mix in 1/4 tsp vanilla extract and 1 tsp date syrup (I used this because I had it in the pantry and it sounds fancy!) you can use any sweetener, like maple syrup, agave, honey, or sugar. Lastly, add 4 drops of plant-based red food dye to make the yogurt pink! (Optional) As previously mentioned, you can also opt for a store-bought sweetened vanilla or raspberry yogurt.

Dip Raspberries in Yogurt and Freeze

Once the yogurt is combined use a wooden toothpick or skewer to dip each raspberry into the yogurt, making sure to leave the top of the raspberry uncoated. Then place them on a parchment lined cutting board and freeze for 30 minutes, or until yogurt sets.

Dip Yogurt Coated Raspberries in Melted Chocolate

Remove raspberries from the freezer and melt 1/4 dark cup chocolate chips with 1 tsp virgin coconut oil. I melt chocolate on the stovetop over low heat, stirring until melted then immediately remove from heat.

Use your fingers or tool to carefully dip the bottom of each yogurt coated raspberry into the melted chocolate, creating 3-layers of color. Since the yogurt is frozen the chocolate hardens quickly, making it easier to create these beautiful layers.

Return 3-layer chocolate covered raspberries to freezer for 15-30 minutes or until chocolate sets. Store in the freezer and enjoy! Happy Valentine’s Day!

Ingredients
  

  • 25 fresh raspberries

Frozen Yogurt

  • 1/4 Cup dairy-free yogurt Any yogurt of choice
  • 1/4 tsp vanilla extract
  • 1/2 tsp sweetener of choice maple syrup, honey, agave, date syrup, sugar
  • 4 drops plant-based red food coloring 4 drops of red coloring will make pink yogurt, but feel free to use pink coloring if you have it.

Melted Chocolate

  • 1/4 cup dark chocolate chips use chocolate chips of choice; cacao, semi-sweetened, or milk chocolate
  • 1 tsp virgin coconut oil

Instructions
 

  • Wash and dry fresh raspberries
  • Add vanilla extract, red food coloring, and sweetener of choice to yogurt. Mix to combine
  • Line a cutting board or baking sheet with parchment paper
  • Dip raspberries into yogurt, making sure to leave the top third uncoated. Place each yogurt covered raspberry on the parchment paper and freeze for 30 minutes, until the yogurt sets.
  • Melt chocolate chips with coconut oil
  • Use your fingers or tool to dip the bottom of each frozen yogurt coated raspberry into melted chocolate to create 3-layers of color
  • Return to freezer for 15-30 minutes until set
  • Store 3-layer raspberries in airtight container in the freezer and enjoy!

Notes

  • Any dairy-free or regular yogurt can be used 
  • Store-bought raspberry or strawberry flavored yogurt can be substituted. If using flavored yogurt you may skip the food coloring and sweetener step
  • Any type of chocolate works great
