I know what you’re thinking. Sweet potato toast? Yes, swap your favorite bread for toasted sweet potato and you won’t be disappointed. This meal is one of my absolute favorites! Gluten-free, high fiber, packed with nutrients, and oh-so delicious😋

This is a simple, wholesome recipe. Slice sweet potatoes, toast until golden brown, top with your favorite ingredients, and you’ve made a tasty breakfast, lunch, or snack. This recipe is a great way to eat more nutrient-rich sweet potatoes and switch up your traditional toast! Plus, it’s officially Fall so that means a lot of tasty sweet potato recipes!

Sweet potatoes are nutritious and delicious

I’m a huge fan of sweet potatoes. A versatile sweet, starchy root vegetable with many proven health benefits. They’re nutrient-dense, naturally gluten-free, high in fiber, and did I mention delicious?

  • High in antioxidants
  • Rich in beta-carotene
  • Low carb grain
  • Low in calories
  • High in fiber
  • Great source of vitamin A  (vitamin A health benefits include boosting immune system, preserving vision, anti-aging, healthy cell growth and more!)

Let’s make sweet potato toast

When grocery shopping I always look for larger sweet potatoes. This allows more real estate for topping your sweet potato toast!

First wash the sweet potatoes well. I recommend using a fruit and veggie brush to scrub them clean.

Slice the sweet potatoes lengthwise using a large sharp knife or mandolin slicer.

Carefully cut the sweet potatoes into 1/4 inch slices (be very careful cutting raw potatoes as they will be firm.) Make sure the slices are not too thin as they may break, and not too thick to ensure they cook thoroughly.

Bake slices in the oven for 10 minutes or boil 5 minutes on the stovetop until slightly tender. Allow the sweet potatoes to cool slightly on a wire rack. Pop in the toaster until fork tender and golden brown. Transfer back to wire rack, add toppings, enjoy! ⁣

*You may skip baking/boiling sweet potatoes and put directly into the toaster, but you will need to toast for longer.

Sweet potato toast toppings!

There are endless possibilities for topping sweet potato toast. They taste great with sweet or savory combinations.

Here are a few of my favorite toppings (as pictured!):

  • Almond butter, sliced cherries, dates, hemp seeds⁣
  • Avocado, green onion, everything seaso, nutritional yeast, sprouts⁣
  • Peanut butter, banana, mixed nuts + grains⁣ or granola
  • Dairy-free sour cream, black beans, cilantro, hot sauce⁣

Britt’s Tips

  1. Choose the largest sweet potatoes at the store. Bigger sweet potatoes equal more room for toppings on your toast!
  2. Bake or boil the sweet potatoes for 5-15 minutes before toasting. This will make the sweet potatoes tender and require less toasting time.
  3. Slice off ends of sweet potatoes before cutting lengthwise. This helps the slices stay upright while being toasted.
  4. Make the sweet potato toast in an, oven, toaster, toaster oven, or air fryer. Any of these cooking methods work great!

Ingredients
  

  • 1 large sweet potato
  • Olive oil or cooking spray
  • Toppings!

Instructions
 

  • Slice sweet potato lengthwise down the middle with a large sharp knife or mandolin slice. Carefully make 4-5 thin lengthwise slices about 1/4" thick.
  • Drizzle olive oil or spray sweet potato slices with cooking spray and season with a pinch of salt.

Oven Instructions

  • Preheat oven to 350℉.
  • Place sweet potato slices on a lined or oiled baking sheet. You may additionally use a baking wire rack.
  • Bake for 15-20 minutes, until potatoes are fork tender and golden brown.
  • Remove the sweet potatoes from the oven and cool on a wire rack.
  • Adding toppings of choice. Enjoy!

Toaster Instructions

  • Toast sweet potato slices on high.
  • Continue toasting until slices are fork tender and golden brown.
  • Remove the sweet potatoes from the toaster and place on a wire rack to cool slightly.
  • Add toppings of choice. Enjoy!

Notes

Storage: Store leftovers in an airtight container in the fridge. The sweet potato slices will last 3 days in the fridge. Toast again to reheat before enjoying!
