3-Layer Chocolate Covered Raspberries

These 3-layer Chocolate Covered Raspberries are coated in yogurt then dipped in melted chocolate for a healthy bite-size treat!

Ingredients
  

  • 25 fresh raspberries
Frozen Yogurt
  • 1/4 Cup dairy-free yogurt Any yogurt of choice
  • 1/4 tsp vanilla extract
  • 1/2 tsp sweetener of choice maple syrup, honey, agave, date syrup, sugar
  • 4 drops plant-based red food coloring 4 drops of red coloring will make pink yogurt, but feel free to use pink coloring if you have it.
Melted Chocolate
  • 1/4 cup dark chocolate chips use chocolate chips of choice; cacao, semi-sweetened, or milk chocolate
  • 1 tsp virgin coconut oil

Method
 

  1. Wash and dry fresh raspberries
  2. Add vanilla extract, red food coloring, and sweetener of choice to yogurt. Mix to combine
  3. Line a cutting board or baking sheet with parchment paper
  4. Dip raspberries into yogurt, making sure to leave the top third uncoated. Place each yogurt covered raspberry on the parchment paper and freeze for 30 minutes, until the yogurt sets.
  5. Melt chocolate chips with coconut oil
  6. Use your fingers or tool to dip the bottom of each frozen yogurt coated raspberry into melted chocolate to create 3-layers of color
  7. Return to freezer for 15-30 minutes until set
  8. Store 3-layer raspberries in airtight container in the freezer and enjoy!

Notes

  • Any dairy-free or regular yogurt can be used 
  • Store-bought raspberry or strawberry flavored yogurt can be substituted. If using flavored yogurt you may skip the food coloring and sweetener step
  • Any type of chocolate works great
