Piña Colada Popsicles – my most requested recipe!

As a recipe developer I find most of my inspiration in the kitchen, but I also get inspired while browsing the web exploring recipes to try from other home chefs, nutritionists, and recipe developers. Piña Colada Popsicles Taste Like a Hawaiian Vacation
This Piña Colada popsicle recipe always makes me think of our last trip to Hawaii, relaxing in the sun under the palms with a blended Piña Colada in hand – including a cute umbrella garnish of course. I originally came up with this recipe a couple years ago after we got home from Hawaii. Oh how I missed those delicious blended Piña Coladas, so I decided to make a healthier one at home. I made a traditional Pina Colada but added frozen strawberries. It turned out so thick and creamy – I thought “wow this would be amazing frozen!” That’s how the Piña Colada popsicle recipe came about. Truly, I can’t think of anything more refreshing on a sunny day than a frozen Piña Colada. I know you’re going to enjoy this one!
How to Make Layered Piña Colada Popsicles
I layer the Piña Colada Popsicles by blending each mixture separately then add one-by-one, allowing to set in the freezer in between. It takes longer than making a traditional popsicle, but they turn out beautifully.
- Start with popsicle mold of choice and popsicle sticks if needed. You will split the molds into 3 layers.
- First blend the pineapple layer and fill the bottom of each mold. Freeze for 20 minutes while you prepare the next layer.
- While the pineapple later is setting in the freezer blend the coconut layer. Pour over pineapple layer and return to freezer for 20 minutes.
- While the coconut layer sets blend the strawberry layer.
- Add strawberry mix to fill molds.
- Insert popsicle sticks in the center of each mold then return to freezer until set, or at least 6 hours.
A Fun Activity to do With Kids
On these warm summer days I love making homemade popsicles with my daughter. It’s a fun activity to do together and of course, Olive enjoys eating them (before they melt)! The tricky thing about photographing popsicles is I have to move quickly after I take them out of the freezer! Olive sits and enjoys her pop while watching me frantically take photos before they melt, lol. I first took photos in my home studio then carried the popsicles outside. I really like natural light when photographing food that’s often enjoyed outdoors! Layered Strawberry Piña Colada Popsicles (Dairy-free!)
Equipment
- popsicle mold
Ingredients
Pineapple Layer
- 1 cup chopped fresh pineapple
- 1/2 cup coconut water
Coconut Layer
- 1/4 cup heavy coconut cream (or sub full-fat coconut milk)
- 3 tbsp coconut milk
- 1 tbsp finely shredded unsweetened coconut
- 2 tbsp agave nectar or maple syrup
- 1/4 tsp vanilla extract
- pinch of salt
Strawberry Layer
- 1 cup strawberries
- 1/4 cup coconut milk or water
- 1 tbsp agave nectar or maple syrup optional
Instructions
Pineapple Layer
- Add pineapple and coconut water to blender.
- Combine then add to bottom of each popsicle mold.
- Set in the freezer for at least 20 minutes
Coconut Layer
- Add coconut cream, coconut milk, coconut shreds, maple syrup, vanilla extract and salt to blender until blended and creamy.
- Remove popsicle molds from freezer and pour over pinepple layer.
- Return to freezer for at least 20 minutes.
Strawberry Layer
- Add strawberries and coconut milk or water to blender until combined.
- Pour to the top of strawberry molds.
- Insert the popsicle sticks into the center of each mold. Return to freezer until completly set or for at least 6 hours.
- To remove the popsicles from the mold, run warm water over the outside of the popsicle molds for a few seconds until you can pull out the popsicles.
- Enjoy!
