Layered Strawberry Piña Colada Popsicles (Dairy-free!)
Non-Alcoholic Layered Strawberry Piña Colada Popsicles are creamy, refreshing and taste like a tropical vacation.
Prep Time 1 hour hr
Freeze 6 hours hrs
Pineapple Layer
- 1 cup chopped fresh pineapple
- 1/2 cup coconut water
Coconut Layer
- 1/4 cup heavy coconut cream (or sub full-fat coconut milk)
- 3 tbsp coconut milk
- 1 tbsp finely shredded unsweetened coconut
- 2 tbsp agave nectar or maple syrup
- 1/4 tsp vanilla extract
- pinch of salt
Strawberry Layer
- 1 cup strawberries
- 1/4 cup coconut milk or water
- 1 tbsp agave nectar or maple syrup optional
Pineapple Layer
Add pineapple and coconut water to blender.
Combine then add to bottom of each popsicle mold.
Set in the freezer for at least 20 minutes
Coconut Layer
Add coconut cream, coconut milk, coconut shreds, maple syrup, vanilla extract and salt to blender until blended and creamy.
Remove popsicle molds from freezer and pour over pinepple layer.
Return to freezer for at least 20 minutes.
Strawberry Layer
Add strawberries and coconut milk or water to blender until combined.
Pour to the top of strawberry molds.
Insert the popsicle sticks into the center of each mold. Return to freezer until completly set or for at least 6 hours.
To remove the popsicles from the mold, run warm water over the outside of the popsicle molds for a few seconds until you can pull out the popsicles.
