Sweet Potato Toast

Golden brown sweet potato slices topped with sweet and savory toppings. Swap your favorite bread for toasted sweet potato, you won't be disappointed. Gluten-free, high fiber, packed with nutrients, and oh-so delicious anytime of day.

Ingredients
  

  • 1 large sweet potato
  • Olive oil or cooking spray
  • Toppings!

Equipment

  • Toaster
  • Oven (optional)

Method
 

  1. Slice sweet potato lengthwise down the middle with a large sharp knife or mandolin slice. Carefully make 4-5 thin lengthwise slices about 1/4" thick.
  2. Drizzle olive oil or spray sweet potato slices with cooking spray and season with a pinch of salt.
Oven Instructions
  1. Preheat oven to 350℉.
  2. Place sweet potato slices on a lined or oiled baking sheet. You may additionally use a baking wire rack.
  3. Bake for 15-20 minutes, until potatoes are fork tender and golden brown.
  4. Remove the sweet potatoes from the oven and cool on a wire rack.
  5. Adding toppings of choice. Enjoy!
Toaster Instructions
  1. Toast sweet potato slices on high.
  2. Continue toasting until slices are fork tender and golden brown.
  3. Remove the sweet potatoes from the toaster and place on a wire rack to cool slightly.
  4. Add toppings of choice. Enjoy!

Notes

Storage: Store leftovers in an airtight container in the fridge. The sweet potato slices will last 3 days in the fridge. Toast again to reheat before enjoying!
