Method
- Slice sweet potato lengthwise down the middle with a large sharp knife or mandolin slice. Carefully make 4-5 thin lengthwise slices about 1/4" thick.
- Drizzle olive oil or spray sweet potato slices with cooking spray and season with a pinch of salt.
Oven Instructions
- Preheat oven to 350℉.
- Place sweet potato slices on a lined or oiled baking sheet. You may additionally use a baking wire rack.
- Bake for 15-20 minutes, until potatoes are fork tender and golden brown.
- Remove the sweet potatoes from the oven and cool on a wire rack.
- Adding toppings of choice. Enjoy!
Toaster Instructions
- Toast sweet potato slices on high.
- Continue toasting until slices are fork tender and golden brown.
- Remove the sweet potatoes from the toaster and place on a wire rack to cool slightly.
- Add toppings of choice. Enjoy!
Notes
Storage: Store leftovers in an airtight container in the fridge. The sweet potato slices will last 3 days in the fridge. Toast again to reheat before enjoying!
