Coconut Peanut Butter Bites

These no bake Coconut Peanut Butter Bites are yummy, wholesome, and only take a handful of ingredients.Perfect for breakfast, snack, or dessert. This recipe yields 6-8 bites.

- 1/2 cup creamy unsalted peanut butter
- 1 cup old fashion or quick oats
- 1/4 cup shredded coconut – unsweetened
- 2 tbsp honey (may also use agave)
- 1-2 tbsp coconut oil
- 1-2 tbsp oat milk
- 1.5 tsp cinnamon
- 1 tsp pure vanilla extract
- 1/8 tsp sea salt
Mix all ingredients in a bowl until well-combined.
Cover and chill in the refrigerator for at least 20 minutes.
Remove from fridge and roll into 1 inch balls between your hands.
Enjoy!
Before making you can add the oats & dried coconut to a food processor or blender until they reach flour consistency, or leave them whole for a crunchier version!
May be stored in the fridge or freezer.
