Method
- Add the fruit juice to a small saucepan. Heat over low heat until warm, about 2 minutes.
- If using sweetener, stir in the honey, maple syrup, or sweetener of choice. Slowly stir in the gelatin over low heat, mixing quickly until fully dissolved, about 3 minutes. If using agar agar, whisk and bring mixture to a simmer over low-medium heat until combined well, for about 5 minutes.
- Allow mixture to cool 5 minutes. To make a single-color gummy, transfer the mixture to a single bowl. To make two-tone peach ring gummies, divide the mixture into two bowls, and add food coloring to one bowl until the desired peachy color is reached.
- To make a single-color gummy, use a dropper to fill the mold. To make two-tone gummies, use droppers at the same time to simultaneously add the 2 colors on opposite sides to the silicone mold.
- Allow to set for 10-20 minutes before serving. Store in an airtight container in the fridge for up to 1 week. If you’d like to toss in a sugar or monkfruit sweetener coating, do so right before enjoying.
Notes
*When making two-tone gummies, if the gelatin mixes when adding the two colors with two droppers, allow gelatin to cool for 2-3 more minutes. It will slightly thicken so won't blend together when adding to the molds.
Store in an airtight container in the fridge for up to 1 week.
