This savory spinach mushroom oatmeal bowl is a delicious way to switch up your morning oats! We tend to see oats enjoyed with sweet toppings, but oats like other grains pair perfectly with savory flavors. Personally I prefer a savory breakfast!
Savory Oatmeal Mix-ins and Toppings
Oats can be prepared with a variety of mix-ins and toppings. I made this bowl with onion, mushrooms, spinach, cherry tomatoes topped with parmesan, red pepper flakes, and parsley. Once you make the oatmeal base there are endless oatmeal mix-ins and toppings you can try!
- Veggies
- Sliced avocado
- Cheese
- Jalapeños
- Fresh herbs – basil, cilantro, parsley, chives
- Green onion
- Cooked egg
Savory Oatmeal Bowl
Oats like other grains pair perfectly with savory flavors, and this savory spinach mushroom oatmeal bowl is a delicious way to switch up your morning oats!
Ingredients
- 1/2 tbsp grass fed butter or olive oil
- 1/4 cup white or yellow onion
- 10 white mushrooms
- 2 garlic cloves
- 2 cups vegetable broth
- 1 cup old fashioned rolled oats
- 1 cup spinach
- 1/2 cup cherry tomatoes
- 1/2 tsp salt
- 1/4 tsp pepper
- cooked egg on top! optional
Topping
- basil, parsley or green onion
- sprinkle of parmesan cheese
- avocado thinly sliced
- red pepper flakes
Instructions
- Add butter to a pan over medium heat.
- Slice mushrooms and chop onion then sauté for 10 minutes or until onions are translucent.
- Lower heat and continue cooking for about 5 minutes or until onions are soft and caramelized; season with salt.
- Add in minced garlic and cook for 1-2 minutes or until fragrant.
- Stir in vegetable broth and bring to a boil, reduce heat then add oats and cook for 5-10 minutes until oats are tender and broth is absorbed.
- Stir in spinach and halved cherry tomatoes and continue cooking until wilted and softened.
- Add to a bowl. If desired, top with fresh herbs, avocado, red pepper and cheese
