Savory Oatmeal Bowl

Oats like other grains pair perfectly with savory flavors, and this savory spinach mushroom oatmeal bowl is a delicious way to switch up your morning oats!

- 1/2 tbsp grass fed butter or olive oil
- 1/4 cup white or yellow onion
- 10 white mushrooms
- 2 garlic cloves
- 2 cups vegetable broth
- 1 cup old fashioned rolled oats
- 1 cup spinach
- 1/2 cup cherry tomatoes
- 1/2 tsp salt
- 1/4 tsp pepper
- cooked egg on top! optional
Topping
- basil, parsley or green onion
- sprinkle of parmesan cheese
- avocado thinly sliced
- red pepper flakes
Add butter to a pan over medium heat.
Slice mushrooms and chop onion then sauté for 10 minutes or until onions are translucent.
Lower heat and continue cooking for about 5 minutes or until onions are soft and caramelized; season with salt.
Add in minced garlic and cook for 1-2 minutes or until fragrant.
Stir in vegetable broth and bring to a boil, reduce heat then add oats and cook for 5-10 minutes until oats are tender and broth is absorbed.
Stir in spinach and halved cherry tomatoes and continue cooking until wilted and softened.
Add to a bowl. If desired, top with fresh herbs, avocado, red pepper and cheese
