Sesame Chicken Lettuce Wraps with Rice

These easy Sesame Chicken Lettuce Wraps with Rice are a quick and flavorful dinner made with tender ground chicken, shredded veggies, and a sweet-savory sauce. Served in crisp lettuce leaves over fluffy rice, they’re perfect for busy weeknights or meal prep.

Ingredients
  

  • 1 tbsp  avocado oil or olive oil
  • 1/2 medium sweet onion, diced or 1 small sweet onion, diced
  • 1 lb ground chicken can use a block of tofu instead of chicken
  • 1 tbsp McCormicks "Everything Gonna Be All-Rice" seasoning Can use other sesame or asian-inspired seasoning blend
  • 2-3 cloves garlic, minced
  • ½ cup carrots, shredded
  • 1 cup cabbage, shredded
  • ¼ cup thai sweet ginger sauce or sweet chili sauce
  • 2 tbsp coconut aminos or soy sauce I use 1 tbsp of each! Add more to taste
  • 1 tbsp rice wine vinegar
  • 1 ½ tsp sesame oil
For serving
  • 1 head butter or romaine lettuce
  • 2 cups cooked rice
  • green onion, chopped, for topping
  • sesame seeds, for garnish

Method
 

  1. Cook rice on the stove, in rice cooker or use premade rice
  2. In a large skillet over medium heat add olive oil or avocado oil. Add onions and cook until onions are translucent, about 2-4 minutes.
  3. Add chicken to the pan, breaking it up with a spatula. Season with salt and cook until it starts to brown and there is no more pink, about 3-4 minutes. Add McCormick "Everything Gonna Be All-Rice" and 2 cloves garlic and stir to combine.
  4. Add the carrots and cabbage, cooking an additional 4-5 minutes or until vegetables are tender.
  5. In a small bowl, combine the sweet chili or ginger sauce, soy sauce or coconut aminos, rice vinegar and sesame oil. Stir until smooth. Add to pan and stir to coat chicken veggie mix.
  6. Spoon rice and chicken into lettuce leaves then top with green onion, and more seasoning or sesame seeds. Enjoy!
