Cook rice on the stove, in rice cooker or use premade rice
In a large skillet over medium heat add olive oil or avocado oil. Add onions and cook until onions are translucent, about 2-4 minutes.
Add chicken to the pan, breaking it up with a spatula. Season with salt and cook until it starts to brown and there is no more pink, about 3-4 minutes. Add McCormick "Everything Gonna Be All-Rice" and 2 cloves garlic and stir to combine.
Add the carrots and cabbage, cooking an additional 4-5 minutes or until vegetables are tender.
In a small bowl, combine the sweet chili or ginger sauce, soy sauce or coconut aminos, rice vinegar and sesame oil. Stir until smooth. Add to pan and stir to coat chicken veggie mix.
Spoon rice and chicken into lettuce leaves then top with green onion, and more seasoning or sesame seeds. Enjoy!
