These Meal Prep Grinder Salad Jars are loaded with deli turkey, salami, cheeses, crisp veggies, and a creamy Italian-inspired grinder dressing. Layered to stay fresh for days, they’re the perfect high-protein, make-ahead lunch.

Ingredients
  

Grinder Salad Dressing
  • ¼ cup mayonnaise
  • ¼ cup plain Greek yogurt
  • 2 tablespoons red wine vinegar or to taste
  • teaspoons Dijon mustard or to taste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon dried rosemary
  • ¼ teaspoon crushed red pepper optional
  • ¼ teaspoon kosher salt or to taste
  • ¼ teaspoon ground black pepper or to taste
Salad Layering
  • ¼ cup plus 2 tablespoons drained and chopped or sliced pepperoncini
  • cups halved cherry tomatoes
  • ¼ cup plus 2 tablespoons diced red onion
  • 1 cup chopped cucumber
  • cups chopped deli turkey
  • ¾ cup thinly sliced salami ribbons
  • ¾ cup quartered mozzarella cheese balls ciliegine (about 20 cheese balls)
  • ¾ cup cubed Provolone cheese
  • ¼ cup plus 2 tablespoons shredded Parmesan cheese
  • cups packed shredded fresh spinach
  • ½ cup chopped fresh basil
  • cups loosely packed shredded iceberg lettuce
  • ¾ cup Italian-seasoned croutons 15–21 croutons

Method
 

  1. Start by making the grinder salad dressing: In a small bowl, whisk together all dressing ingredients until smooth and well combined. Taste and adjust vinegar or mustard for desired tanginess. Adjust additional salt and pepper, if desired.
  2. Assemble the salad: Place 3 1/2 tablespoons of the dressing in the bottom of each jar.
  3. Layer the ingredients in each jar in this order: 2 tablespoons pepperoncini, ½ cup tomatoes, 2 tablespoons red onion, ⅓ cup cucumber, ½ cup turkey, ¼ cup salami, ¼ cup mozzarella, ¼ cup Provolone, 2 tablespoons Parmesan, ½ cup spinach, 2 tablespoons basil, 1¼ cups lettuce, and ¼ cup croutons.
  4. Seal the jars, and refrigerate for up to 4 days.
  5. When ready to eat, shake the jars to distribute the dressing. or pour into a bowl and toss to combine. Enjoy!
