Kid Approved Green Pesto Pasta
This Green Pesto Pasta is packed full of veggies and absolutely delicious for the whole family! It's gluten-free, dairy-free and only takes 20 minutes to make.

Pasta
- 1 pound Fusilli Brown Rice Pasta (or pasta of choice)
- Pinch of Salt
Pesto Sauce
- 1/4 cup extra virgin olive oil
- 3 cups spinach
- 1 cup fresh basil
- 1 cup kale
- 1/4 cup vegan parmesan you can also use 2 extra tbsp nutritional yeast instead of vegan parmesan
- 1 tbsp nutritional yeast
- 1/4 cup unsalted cashews
- 2 cloves garlic
- 1 tsp lemon juice
- salt and pepper to taste
- 1 tbsp purified water add to thin sauce, if needed
Toppings
- steamed peas
- steamed broccoli
- vegan parmesan or mozzarella
Bring a large pot of water to a boil. Cook pasta according to package directions or until al dente. Remove pot from heat, drain and return to pot.
Steam frozen peas and broccoli on the stovetop.
While the pasta is cooking make the pesto sauce. Add pesto ingredients into the food processor (or blender) and blend until combined.
Pour the pesto sauce over the pasta and mix. Add pasta to bowls and top portions with peas, broccoli and extra parmesan or mozzarella cheese.
