Butternut Squash Harvest Salad with Sweet Orange Dressing
This delicious Butternut Squash Harvest Salad is ideal for the holidays. Butter browned butternut squash over a bed of kale massaged in fresh orange juice and olive oil. Topped with festive seasonal ingredients.

Butternut Squash
- 1 cup butternut squash
- 1 tbsp butter
Salad
- 5 cups kale chopped thin
- 1/2 tbsp olive oil to massage kale
- 1/2 tbsp navel orange juice to massage kale
- 1 cup green beans cooked and cooled
- 1/4 cup pomegranate
- 1/4 cup pistachio
- 1/4 cup goat cheese, feta cheese or dairy-free alternative
Sweet Orange Dressing
- 1/2 cup extra virgin olive oil
- 1/4 cup fresh orange juice
- 1/2 tbsp Dijon mustard
- 2 tbsp apple cider vinegar
- 1 tbsp maple syrup
- 1/8 tsp salt
Add butter to pan over medium heat. Once warmed add butternut squash to a pan over medium for a few minutes then add 1/2 cup of water and cook until absorbed
Cook green beans how you like best, pan seared or boiled - then allow to cool
Allow butternut squash to cool while you preparing the kale
Add chopped kale to salad bowl
Squeeze orange and olive oil over kale and massage between your fingers for a few minutes until tender
Add butternut squash, chopped green beans, pomegranate arils, pistachios and feta cheese
Toss with dressing and enjoy!
