Sweet, creamy, and packed with cherry flavor, this Very Cherry Chia Pudding is the perfect make-ahead breakfast or healthy snack. I love cherry season and this is a great way to use up that batch of cherries in your fridge! For the cherry chia pudding base I add yogurt which makes it’s a thick and creamy chia pudding. Then I add a little almond extract with honey to make this chia pudding exceptionally flavorful.  For the parfaits I layer the creamy cherry chia pudding, sweet cherry jam, and top with fresh cherries and sliced almonds. These beautiful layered chia pudding jars taste like cherry pie, but made with simple nutritious ingredients. Easy to prep ahead for busy mornings and make the perfect high-fiber breakfast, afternoon snack, or healthy dessert.

Very Cherry Chia Pudding

This Very Cherry Chia Pudding is layered with creamy cherry pudding, sweet cherry preserves, fresh cherries and almonds for an easy make-ahead breakfast that tastes like dessert. Made with simple ingredients these pudding jars are perfect for meal prep, healthy snacking, or a nutritious breakfast.

Servings: 3 12-ounce jars

Ingredients
  

  • 2 cups unsweetened vanilla almond milk any plant-based milk works!
  • 1/2 cup chia seeds
  • 1/8 tsp almond extract just a few drops is good!
  • 5 oz cherry yogurt or plain yogurt I use a small 5.3 oz container of Trader Joe's Icelandic Cherry Yogurt
  • 1-2 tablespoons honey more if you want it sweeter!
  • 1.5 tbsp cherry preserves, jam or jelly
  • 10 fresh cherries
  • 1/4 cup sliced almonds

Equipment

  • 3 12-ounce jars
  • 1 large bowl or jar

Method
 

  1. To a large bowl or jar, add milk, yogurt, almond extract, honey and mix. Then stir in chia seeds until well combined.
  2. Let chia pudding set in the fridge for at least 3-4 hours, or overnight
  3. If enjoying right out of the fridge (and not building parfaits) add as much chia pudding you'd like to bowl and top with a spoonful of cherry preserves, chopped fresh cherries, and shaved almonds.
Very Cherry Chia Parfaits
  1. Slice then chop about 10 cherries, making sure to remove the pits first.
  2. Once chia pudding is set. To each jar add 1/2 cup chia pudding, layer with 1/2 tbsp cherry preserves/jam and carefully spread evenly over chia pudding, top with another 1/2 cup chia pudding then finish with the chopped fresh cherries and shaved almonds. Add granola or more honey, if you'd like!
  3. Store in the fridge in airtight jars for up to 5 days. Enjoy!
