Butternut Squash Harvest Salad with Sweet Orange Dressing
This delicious Butternut Squash Harvest Salad is ideal for the holidays. Butter browned butternut squash over a bed of kale massaged in fresh orange juice and olive oil. Topped with festive seasonal ingredients.
Ingredients
Butternut Squash
- 1 cup butternut squash
- 1 tbsp butter
Salad
- 5 cups kale chopped thin
- 1/2 tbsp olive oil to massage kale
- 1/2 tbsp navel orange juice to massage kale
- 1 cup green beans cooked and cooled
- 1/4 cup pomegranate
- 1/4 cup pistachio
- 1/4 cup goat cheese, feta cheese or dairy-free alternative
Sweet Orange Dressing
- 1/2 cup extra virgin olive oil
- 1/4 cup fresh orange juice
- 1/2 tbsp Dijon mustard
- 2 tbsp apple cider vinegar
- 1 tbsp maple syrup
- 1/8 tsp salt
Instructions
- Add butter to pan over medium heat. Once warmed add butternut squash to a pan over medium for a few minutes then add 1/2 cup of water and cook until absorbed
- Cook green beans how you like best, pan seared or boiled - then allow to cool
- Allow butternut squash to cool while you preparing the kale
- Add chopped kale to salad bowl
- Squeeze orange and olive oil over kale and massage between your fingers for a few minutes until tender
- Add butternut squash, chopped green beans, pomegranate arils, pistachios and feta cheese
- Toss with dressing and enjoy!
