3-Ingredient Honey Lollipops

Ingredients
  

  • 1 cup cane sugar
  • ¼ cup honey
  • 2 tablespoons purified water
  • 2 teaspoons natural flavor or herbal extract of choice optional ( see notes for ideas!)
  • Edible glitter optional

Method
 

  1. Place 2 (12-count) lollipop molds on top of a parchment-lined large cutting board or baking sheet. Place 24 lollipop sticks in the molds. If using edible glitter, sprinkle some into each lollipop mold. Set aside.
  2. Place the sugar, honey, and water in a small pot, and place a candy thermometer in the pot. Cook over medium heat, stirring often, until the thermometer registers 300°F (150°C) for the hard-crack stage, about 15 minutes. Promptly remove from heat. Let the mixture stand for about 30 seconds, or until the bubbles subside.
  3. If desired, stir the flavor extract into the candy mixture. Carefully transfer the candy mixture to a heat-safe liquid measuring cup. Working quickly, pour the mixture evenly into the lollipop molds. Allow the lollipops to cool at room temperature until completely hardened, 30–60 minutes.
  4. Remove the lollipops from the molds. Wrap the lollipops individually in parchment paper sheets or small plastic bags. Store the wrapped lollipops in an airtight container or a ziplock plastic bag in a cool, dry place for up to 6 months. Enjoy!

Notes

If you don’t have a candy thermometer, you can use the cold water test to check when your honey lollipop mixture is ready. Once your mixture reaches a steady boil at about 8 minutes, simply drop a small spoonful of the hot syrup into a bowl or cup of very cold water. Let it sit for a few seconds, then try to remove it. If the syrup comes together and hardens and becomes brittle—snapping or cracking instead of bending—it has reached the hard crack stage and is ready to pour into molds. If it’s still soft or bendy, continue cooking and test again in 30–60 seconds.
From there, do the cold water test every 30–60 seconds, since the syrup can move quickly from not ready to overcooked.
