No-Bake Protein Strawberry Cheesecake Bowl

This Strawberry Cheesecake Bowl is a quick and easy no-bake dessert made with cottage cheese, maple syrup, fresh strawberries, and graham crackers. Creamy, lightly sweet, with added protein. It’s the perfect single-serve dessert when you’re craving cheesecake.

Ingredients
  

  • 8 oz cottage cheese whole milk or low fat
  • 1 tbsp maple syrup
  • 1 tsp vanilla
  • 1 tsp lemon juice optional
  • 4 medium strawberries
  • 8 small graham cracker cookies I use Simple Mills honey cinnamon thins!

Equipment

  • food processor or blender

Method
 

  1. In a food processor or blender, add cottage cheese, maple syrup, vanilla, 2 strawberries and lemon juice (if using). Pulse just until combined, about 1 minute.
  2. Slice 2 strawberries
  3. Add mixture to a bowl of choice (10 oz bowl at least) reserving about 1 tablespoon of mixture in the food processor or blender for later use.
  4. Push graham- cracker cookies and sliced strawberries into cheesecake base across the top, alternating until covered.
  5. Crush 2 cookies to add on top.
  6. Set in the refrigerator for at least 2 hours or overnight. This allows the cookies to soften and the cottage cheese base to thicken for a creamy texture.
  7. Remove from fridge and garnish with a strawberry, if desired. Enjoy!
