- In a food processor or blender, add cottage cheese, maple syrup, vanilla, 2 strawberries and lemon juice (if using). Pulse just until combined, about 1 minute.
- Slice 2 strawberries
- Add mixture to a bowl of choice (10 oz bowl at least) reserving about 1 tablespoon of mixture in the food processor or blender for later use.
- Push graham- cracker cookies and sliced strawberries into cheesecake base across the top, alternating until covered.
- Crush 2 cookies to add on top.
- Set in the refrigerator for at least 2 hours or overnight. This allows the cookies to soften and the cottage cheese base to thicken for a creamy texture.
- Remove from fridge and garnish with a strawberry, if desired. Enjoy!
